About us
In 1884, Karl Elsener opened his cutler’s workshop in Ibach-Schwyz. At this time Switzerland was still one of the poorer countries in Europe. In the early years Karl Elsener worked to combat poverty and unemployment in the Schwyz basin, creating jobs and helping stem the flow of emigration.
In 1891 he supplied the soldier’s knife to the Swiss Army for the first time. He went on to develop the Swiss Officer’s and Sports Knife – now the iconic Swiss Army Knife – in 1897, creating the foundation for a flourishing company that would be able to hold its own on the world stage.
From then on, his spirit of solidarity, deep roots in the region and strong commitment to solid values shaped the Victorinox company philosophy.

Formerly Forschner
In 1937 Victorinox began selling cutlery in America through a Connecticut distributor called R.H. Forschner & Co. A well-known manufacturer of butcher scales, Forschner soon became the exclusive U.S. distributor for Victorinox knives, and was the name by which Victorinox knives were known.
In 2011 Victorinox began marketing all its product lines, including kitchen knives, under the common umbrella name by which the company is now popularly known – Victorinox Swiss Army. Today, Victorinox Swiss Army still sells a handful of accessories, including the High Heat Turner line, under the Forschner name.
Care and Use
Be good to your knives and they’ll be good to you. Following these simple guidelines will ensure that you get the longest life out of your knife!
Hand Washing
Victorinox Swiss Army recommends washing all knives by hand. For best results, hand wash your knives with a soapy cloth and dry immediately.
Dishwasher
While this knife is dishwasher safe, we still recommend hand washing, as dishwashers are designed to spray water at a relatively high pressure, which can jostle the silverware and cause the knives to collide, dulling the edge.
Maintaining your Knife’s Edge
For optimum performance, knives should be honed after every couple of uses. Proper and frequent use of a honing steel will keep your knives sharper and performing at their best, but remember that a honing steel will not sharpen a dull knife. Honing steels are maintenance tools and are used to help keep an already sharp blade from degrading. During use, a knife edge becomes rolled or turned from direct contact with cutting boards, bones or other hard objects. In this case, honing is necessary to straighten the edge of the knife. After significant use, the steel particles become damaged and the edge cannot be brought back by honing, so sharpening is necessary. If your knives are dull, pitted, or you see visible nicks on the cutting edge, you’ll need to sharpen with a Swiss Sharp Handheld Sharpener (49002) or bring to a professional for re-sharpening.
History and Heritage
In 1884, Master Cutler Karl Elsener opened a cutlery shop in Ibach, Switzerland. There, he and the cutlers’ union he formed produced the finest steel cutlery, finished with the now-famous proprietary edge preferred globally by professional and home cooks. In 1891, Karl supplied the Swiss Army with its standard issue Soldier’s Knife and in 1897 with the Officer’s Knife. In 1921, after the death of his mother, Victoria, and with the advent of stainless steel, then known as “inoxydable” and used in the production of his cutlery, Karl changed the name of the company to Victorinox. It is from those humble beginnings that a worldwide icon was born.
Today, Victorinox is still owned and operated by the Elsener family, and both the company and family still resides in the small village of Ibach, Switzerland.

I never would have bought such a cheap paring knife if I hadn't been given one. I fell in love with it and find myself reaching over my Wusthof, Trident, Misen, Henckels, Shun... all the paring knives I have long loved. In fact, I'm an admitted knife snob. I like VERY nice knives.
I had to face the fact that while I have spent six times the price for a high-end brand paring knife, this little Victorinox is my favorite. I love the thin blade and find it nimble and it's easy to peel and to slice - you can accomplish very thin slices that add elegance to the appearance of your dish. I don't use it for cheese - I use a chef knife for that purpose because I need the heft. I use it for things like peeling, slicing tomatoes, cutting out stems, and making very thin slices of fruits or vegetables. In fact, I just bought my second Victorinox paring knife because everyone in my home who loves to cook is always using it - while I need it, too!
Do keep it sharp. I sharpen my knives at end of day - every one that I've used that day. I take very good care of my knives and they reward me for it. I have to admit I was very surprised at how much I love this little paring knife. I'm considering getting a Victorinox chef knife. My go-to chef knife cost just under $400. I can't help but wonder if I'll prefer a Victorinox at a tenth the price.
The most important thing you can do with ANY good knife is never, ever put it into the dishwasher, wash and clean it IMMEDIATELY after use, and sharpen it every day that you use it. DO NOT use electric sharpeners - use a whetstone or diamond embedded sharpening stone or plate.
YouTube channel, Burrfection, has fantastic videos about knife sharpening, care, use, and how to find the knives that are right for you. I highly recommend that channel if you're wanting your knives to make your work a breeze.

I cannot even tell you how many miles of English cukes I’ve cut, or how many HUNDREDS of pounds of lettuce, spinach, cherry tomatoes, grapes, pickles, mandarin oranges, apples, peppers, celery, cooked chicken, etc. that this handy little thing has easily cut through. It is still sharp as new and cuts as well as the first day. (ALWAYS hand-washed.)
It feels very comfortable in my (female) hand. I find it to be a very manageable size and, although EXTREMELY sharp and serrated, I do not feel unsafe using it. This thing will pierce and cut through a grape or a tomato like nobody’s business! You can get such thin slices of cucumbers too. Tiny gherkins? Not a problem…however thin you want them! Hard carrots? Effortless!
I have bought a few of these for home and several of as gifts too. (Recipients all share my love of this knife!)
I use this knife every day…it’s always the FIRST one I reach for…still my best friend.
(Shhhh….please don’t tell my husband).

I am a three knife kind of guy: one chefs knife, one bread knife, and one paring knife. It keeps my kitchen uncluttered, simple, and most importantly costs less money. That being said, I put more value in quality than price - my daily chef knife has been the $150 MAC Pro for years. When I first started looking for a paring knife, of course I was attracted to the big names like Wüsthof, Global, and Henkels. However, after reading the reviews I decided to give this little guy a chance. I'm willing to spend $40 on a paring knife, but I can certainly spend a few bucks to see if I like this one more.
I'm so glad I did - this knife lives up to the all the other glowing reviews. It comes sharp out of the box and has stayed that way with very little decline in my time using it. The handle is comfortable enough in my hand (I'm right handed, but it's symmetrical so a lefty would also find it easy to use). The blade holds up to tough use but is slightly flexible so it feels more like an extension of my hand. The best part is the price! Great performance for 1/3 to 1/5 the price of comparable products. That's a winner in my book.
If there is a negative, perhaps I would prefer that it had a little more heft. If weight is very, very important to you, go give an all-metal Global a try. Otherwise, pick up one of these knives and get a great product for a fraction of the cost of another paring knife.

I looked into this knife because of the strong review for it at The Sweet Home (http://thesweethome.com/reviews/best-paring-knife/) and I don't regret it at all. Whenever others use this knife they comment and immediately recognize the high quality and how easily it accomplishes small/fine cutting/chopping tasks. It is STAMPED, not forged, so eventually it will need replacing, but experts say they have been able to hold onto the same one for 8 years.
PROS:
- Comfortable easy grip makes it good for hand work (e.g. hulling strawberries, peeling shrimp)
- Long lasting and durable
- Lightweight makes it easy to hold and work with

- Lightweight? It may FEEL flimsy but it isn't - haven't noticed any quality issues, but if you want something that feels heavier, this is not your knife.

However, this knife is cheap and might be one of the best paring knives out there.
Mine has stayed sharp over constant use throughout the year. I recently just re-sharpened it and it feels like new.
