Formerly Forschner
In 1937 Victorinox began selling cutlery in America through a Connecticut distributor called R.H. Forschner & Co. A well-known manufacturer of butcher scales, Forschner soon became the exclusive U.S. distributor for Victorinox knives, and was the name by which Victorinox knives were known.
In 2011 Victorinox began marketing all its product lines, including kitchen knives, under the common umbrella name by which the company is now popularly known – Victorinox Swiss Army. Today, Victorinox Swiss Army still sells a handful of accessories, including the High Heat Turner line, under the Forschner name.
Care and Use
Be good to your knives and they’ll be good to you. Following these simple guidelines will ensure that you get the longest life out of your knife!
Hand Washing
Victorinox Swiss Army recommends washing all knives by hand. For best results, hand wash your knives with a soapy cloth and dry immediately.
Dishwasher
While this paring knife is dishwasher safe, we still recommend hand washing, as dishwashers are designed to spray water at a relatively high pressure, which can jostle the silverware and cause the knives to collide, dulling the edge.
Maintaining your Knife’s Edge
For optimum performance, knives should be honed after every couple of uses. Proper and frequent use of a honing steel will keep your knives sharper and performing at their best, but remember that a honing steel will not sharpen a dull knife. Honing steels are maintenance tools and are used to help keep an already sharp blade from degrading. During use, a knife edge becomes rolled or turned from direct contact with cutting boards, bones or other hard objects. In this case, honing is necessary to straighten the edge of the knife. After significant use, the steel particles become damaged and the edge cannot be brought back by honing, so sharpening is necessary. If your knives are dull, pitted, or you see visible nicks on the cutting edge, you’ll need to sharpen with a Swiss Sharp Handheld Sharpener (49002) or bring to a professional for re-sharpening.
History and Heritage
In 1884, Master Cutler Karl Elsener opened a cutlery shop in Ibach, Switzerland. There, he and the cutlers’ union he formed produced the finest steel cutlery, finished with the now-famous proprietary edge preferred globally by professional and home cooks. In 1891, Karl supplied the Swiss Army with its standard issue Soldier’s Knife and in 1897 with the Officer’s Knife. In 1921, after the death of his mother, Victoria, and with the advent of stainless steel, then known as “inoxydable” and used in the production of his cutlery, Karl changed the name of the company to Victorinox. It is from those humble beginnings that a worldwide icon was born.
Today, Victorinox is still owned and operated by the Elsener family, and both the company and family still resides in the small village of Ibach, Switzerland.

I was frustrated with my current set of knives that got super dull within only a year or so. They weren't a terribly nice or expensive set so I decided maybe it was worth splurging on the nicer brand knives. At the cost, however, I could only afford to replace a knife here or there. So I decided to buy an expensive chef's knife from a well-known brand -- it was great and made me really want to replace at least my paring knife (those are the two I use the most) but I just couldn't, at the time, justify spending a ton of money on another knife. Then I happened across this one. So cheap but great reviews -- I had nothing to lose to give it a try.
When I got it, it was really light -- too light. The plastic handle made it feel cheap. But it was razor sharp so I figured hey, it'll do until I replace everything with the really nice (expensive) knives and then this one will just become a back up. And with how cheap it was, I didn't care about putting it in the dishwasher because if it eventually rusted or dulled, I wasn't losing much money on it anyway. Six months later, it is still razor sharp and it is my favorite knife. The expensive chef's knife that I got around the same time and carefully hand wash only? It's starting to get dull... Now I'm planning to replace all my knives with the Victorinox knives instead -- I don't care that they look and feel cheap, they cut and hold up wonderfully. Function over beauty!

Not only is it one of the best paring knives available at any price, it is an absolute steal at this price! Now, depending on your needs and uses, a paring knife is typically not the most used knife in the kitchen. But when you need to cut something small or finely and the chef's knife is just too big, this paring knife is up to the task. It makes quick work of absolutely anything. It is extremely sharp right out of the box and slices through everything like....well....a hot knife through butter. I have yet to sharpen it after several uses and it is still sharp. Clearly, it holds its edge well.
Since I am going for utility in the kitchen and am always budget minded, I did not mind the plastic handle of this knife one bit. It's not going to win any awards for the most beautiful paring knife in the world, but honestly, who cares. For this low a price and this high quality of a knife, you can't go wrong if you're looking for something simple that will get the job done, each and every time!

Out of the package, it was sharp enough to take my nail off. Victorinox blades are a high quality carbon steel. They aren't so full of carbon that they're prone to rusting, and they aren't pure stainless steel, so they keep a sharp edge. In my opinion, especially for the price, they're the perfect knife for daily kitchen duty. I've never had a paring knife to rival it. It easily slices through everything I need it to. The other reviewers were right. In a dollar to performance ratio, these things are awesome.

Honestly, this is the Victorinox Fibrox line's best attribute. Whether your hands are soaking wet or not, you will be able to maintain your grip. That's why I love my Victorinox Chef's knife for breaking down chickens. It doesn't matter how slimy my hands get when peeling off skin, I can grip the knife with 100% firmness. There's zero fear of slippage. The same can't be said for my more expensive knives with smoother, glossy handles. That's why I feel the Swiss line are so darn competitive in terms of multipurpose kitchen knives.

Style: StraightVerified PurchaseThis was a good, sharp knife that I was pleased with. The only problem was that it was a bit too sharp for one of my family members, who worried someone might get hurt with it when peeling fruit or veggies.
The knife is, however, fairly small as the blade length indicates. This proved its eventual undoing, for sadly the nice was buried in a pile of peelings, and when the plate of them were dumped in the recycling basket, the knife seems to have gone with them without anyone noticing.
However, for people who do not suffer from bad eyesight or luck, this is a good tool!
