About the Author

Over the course of two weeks in December 2010, Jenni Hulet went from being an active mother, yoga teacher, and chef to being unable to get out of bed because of uncontrollable pain and muscle spasms. After months of unproductive doctor visits, she began to fear that all her creative pursuits were over and that she would have to resign herself to a life of pain management. Eventually, a doctor was able to identify an emerging autoimmune condition that, though devastating, could be recovered. Jenni was diagnosed as severely gluten and casein intolerant and was put on a strict diet and supplement regimen to heal her ravaged body.

The process of facing down her worst fears and walking a lengthy path of recovery inspired a new expression for Jenni’s passion: to bring beauty, flavor, and freedom to those struggling with the fear and difficulty of living with health restrictions. It was out of this vision that her blog,

Brilliant!
The past 3 days I've nibbled roasted chicken pieces w/ crossed fingers (for my Dr. to just trust my gut instinct & order the celiac blood test already) & read Jenni's book because it reminds me to maintain my passion for sharing what I learn from artists such as she. I, like many in this community, have altered food choices so I may heal. I'm well on my way, but do have "episodes" - as I am currently. If I don't create something (a deliciously beautiful meal, custom metal art, a dessert so exquisite it seems a shame to consume it, a one-of-a-kind light fixture made of a Moroccan incense burner, take enticing photos of food, candid kid pix, or rely on my crazy good optical zoom to capture images of a 9' gator that resides in a nearby pond), I'll go straight-up bananees. Jenni's book is stellar; I can't wait to feel vibrant, useful, energetic, return w/ gusto to my kitchen, & delve into more dazzling fare than bone broth (which I need right now & don't begrudge the process). I must be patient with & kind to my body. My Paleo Patisserie has been a calming, thoughtful inspiration & I'm super excited about her recipes. Thank you, Jenni Hulet! Yesterday, after browning meat in bacon fat & setting up the crock pot, I made the Maple Carrot Cake w/ Swiss Meringue Buttercream Icing. I got so mad that the Beef (I used nilgai) Bourguignon & garlic, 4-pepper goat cheese, "mashed potatoes" (yucca root, actually, that requires almost 2 hours of boiling, straining, heat drying, & being put thru a ricer before eating), wasn't a party in my mouth & that a cud-chewing, vapid dairy cow shows more enthusiasm when eating than The Hubbs did, that I put the cake in the fridge & went to bed. I had the cake for breakfast. Now THAT'S a party in my mouth.

    This book is perfect. While there are some very good Paleo cookbooks out there, this one goes above all expectations of not only the Paleo category, but all cookbooks. "Regular" eaters not only think the food is good, but exceptionally delicious. Paleo/gluten-free eaters are always impressed by how much better, different and more "normal" the textures and flavors are. ("There's no almond/coconut flour texture!") My Paleo Patisserie has remained my go-to dessert cookbook for over a year, and I expect it to be forever.

    Its writing and design are remarkable. Each time I pull it out, I'm impressed by its thoroughness and obvious consideration that went into all aspects.

    My Paleo Patisserie is packed with base recipes, and it has plenty of creations using those foundational recipes. It also gives one the opportunity to become imaginative in one's desserts, just as intended.

    The photography is stunningly beautiful. If one did not think a picture of an éclair could be breathtaking, My Paleo Patisserie proves that belief to be false.

    In most other recipes I follow, I tweak things to my preference. This is completely unnecessary in My Paleo Patisserie. Instead, I have total confidence to make a recipe the very first time for company, and indeed, I have. The guests were all astounded by the phenomenal chocolate cake with raspberry meringue buttercream frosting. I believe one's comment was, "There are no words to express how good it is."

    The directions for all recipes are written very well and accurately. I love the use of weight measurements for perfect results each time. (Cup measurements are provided as well.) The recipes vary widely in difficulty and involvement, but many are surprisingly simple. Even those who do not have much faith in their baking skills have plenty of superb options, like popovers and cookies. Several recipes, such as the cakes and even the Pâte à Choux, initially appear laborious, but realistically are straightforward and do not take too long to come together. In the back, there are even step-by-step photos included for a handful of recipes that are helpful if still unsure.

    I wholeheartedly recommend My Paleo Patisserie to anyone who enjoys baking (or food photography) or good food in the slightest. My Paleo Patisserie has brought much joy and comfort to me through excellent food.

    I actually had tears in my eyes when receiving this book and opening it up, and I am NOT kidding here~ Being a baker at heart I have been less than pleased( this is being kind and generous) in " other" paleo baking books, Everything looked OK, and was somewhat edible and if you are like me, absolutely ANYTHING with a tidge of sweetness was good bc its darn hard to get recipes worth my time and trouble w/ Paleo ingredients. Passable at best~ I had looked over and over at this book and then went over to the author's blog to see if anything was " bakeworthy" as I call it, I made and set up wedding cakes with my mother so beauty in presentation is important and taste, well that's even more important! I have been making chocolate candies and all manners of desserts for years and years so the recipes in the books truly do not intimidate me,,( I HOPE they work is all I care about!) I have made Swiss Meringue Buttercream as well as French buttercream and many others that one might consider " touchy"( lovely on bridal cakes and requested the most) Just take your time and work on them on a day
    when not under a lot of stress and as That said. some of the buttercreams are done slightly different, but always always the best choice for a bridal or very special event, for a classic wedding for a true dessert lover!
    Always FOLLOW the directions for best results! I got more tears in my eyes when I realized that I could once again indulge in my favorite carrot cake, and popovers?? Is this for real?? Again, moderation in all things, I will not be eating this daily, but it SURE is wonderful to know that when I need to bake something I am able to use paleo ingredients~ These are special occasion items for me! I will also be looking into a simple ice cream maker bc I have not have had any in at least 4 yrs, Smoothies with fruit and quality powdered high fat chocolate have been a saving grace for me for those times when everyone else has ice cream, and that I just started doing bc it gets awful hard. I , too, have been through a myriad of health difficulties which forced me to address just what was making me so sick. And having had Lyme disease, along with another auto immune problem, Paleo diet has helped me to live a normal life again, All I can say is a big thank you for this book, I will make it my mission to make one drop dead gorgeous dessert per week so I can get a feel for these recipes prior to the holidays, I appreciate the fact that someone went SO far in Paleo baking, this is like a dream come true for me ( I am a person who had my kitchen completely done over getting rid of a family room just to add on and have a huge kitchen to work in, so maybe you get the idea just how much I love to bake. I have converted my husband to smoothies for one meal per day, and he has a terrible sweet tooth, I am convinced that if I make really great desserts it will help him a lot to! Hands down THE best Paleo baking book EVER, , going on a shelf right next to my beloved Julia Child books! I will report back on success ( or lack there of recipes!)

    Ordinarily I'm fine with our grain-free diet. But every so often...!

    My husband found Jennni Hulet's blog when he was searching for a recipe, and he was so thrilled that I broke my usual cookbook rule for self-control ("take it out of the library; if you make three recipes and want to make more, you have permission to buy the cookbook"). I don't regret it for a moment. This is wonderful.

    We immediately used her recipe for popovers... bringing back the best of Sunday-morning breakfast. The two of us wiped out the whole batch in one sitting.

    We made tiramisu for our New Year's Eve celebration, which uses ladyfingers made from almond flour and a zabaglione with coconut milk. (Also, 16 eggs!) People really had no idea it was dairy-free, much less low-carb. ...and yeah, that didn't last long, either.

    Now we're looking forward to an excuse to make her carrot cake; eclairs; chocolate-cherry cake. Oh, YUM.

    But you should be aware: Even though the recipes are well-written (lots of advice, not simply instructions), and many photos walk you through techniques (9 pictures demonstrating how to roll out almond flour crusts), this is not a cookbook for novices. If you're used to "Stuff Made Easy" baking, you might be daunted by the number of steps required. Then again, if you're an experienced cook, you'll appreciate the effort to _do it right_. I certainly do.

    Following a paleo diet, be it by choice or by necessity, often means giving up old favorites - or spending half a month's salary on expensive ingredients. Not any more. The ingredient lists in this book are short and simple, and the directions are easy to follow. The book is absolutely gorgeous as well, and the "build your own..." at the end of each chapter allow you to customize everything to your own tastes and needs! Plus, a large number of these recipes are egg free, and most are nut free.

    Well i got this book on kindle 1st as couldnt wait to see it! I still bought the book! All the ideas are great as everything is mix and match and also variations for nut free if needed. I have just made my 1st thing which is the marshmallows and tasting the bits on the mixer it tastes amazing! I have made regular one before and they have all tasted cr@p but these havent even set yet and they are brill. Really cant wait to try something else now but need to get some maple sugar. Will update when try something else. This certainly will help the kids (and my)sweet tooth and perfect for treats.

    AMAZING - Now I really can eat grain free cakes, tarts, cookies and pastries, even ice cream and marshmallows. Not the usual dense or cardboard like biscuits associated with seeds and gluten free flour but choux pastry, Bundt cake, frangipane tart, madeleines, opera cake - I'm in heaven!
    Easy to follow instructions, photos to help, 'build your own' pages (for those who want more variety than the 56 recipes provided) and information on allergens, resources, equipment and ingredients make this an amazing book that really is worth every cent.
    Looking for a great gift - this is ideal.

    The Paleo Patisserie is the most amazing book! Beautiful to look at, with easy to follow recipes; it is inspiring, and wide ranging.
    Gave us back the ability to have lots of amazing treats, and shows that being on a gluten free, dairy free, even processed sugar free, diet does not remove fabulous patisseries from your life. Heartily recommend!

    I am in love with this book - have made several things and all of them have been delicious and all dinner guests have enjoyed them throughly. I've made several tarts (apple, lemon, pear/almond frangipane), as well as the popovers and both the chocolate and vanilla cakes. INCREDIBLE! I should note that I have never used palm shortening, which many recipes call for, but always swap out for organic, grass fed butter with total success! Highly recommend this book. I feel good making these nourishing, gorgeous dishes for myself and my family. Treats that you can truly enjoy and feel nourished by - inside and out.
