Cheesy Cauliflower Casserole

Ingredients
- ¼ cup (55 g/1.9 oz) ghee or other healthy cooking fat (see page 14)
- 1 small (70 g/2.5 oz) yellow onion, chopped
- 5.3 ounces (150 g) broccolini or broccoli, cut into florets
- 5.3 ounces (150 g) asparagus, cut into thirds
- 1 large cauliflower (1 kg/2.2 lb), riced (page 18)
- ¼ cup (60 g/2.1 oz) Red Pesto (page 37)
- ½ cup (120 g/4.2 oz) canned chopped tomatoes
- Salt and pepper
- 2 cups (226 g/8 oz) shredded cheese of choice (Cheddar, Manchego, Gouda, or Gruyère), divided
- 6 large eggs, lightly beaten
Makes: 8 Servings
Preparation Time: 15 minutes, Cooking Time: 35 minutes
With just a handful of pantry ingredients, this hearty vegetarian casserole is the perfect solution when you’re short on time. It’s got plenty of low-carb, fiber-rich vegetables like broccolini and asparagus, but it gets its (serious) heft from protein-packed eggs and cheese.
Instructions
Preheat the oven to 360°F (180°C, or gas mark 4). In a large skillet greased with the ghee, cook the onion over medium-high heat for 5 to 8 minutes, until lightly browned.
Add the broccolini and asparagus, and cook for 2 to 3 minutes. Add the cauliflower rice and cook for about 5 minutes, stirring frequently.Add the pesto and tomatoes, and cook for 2 to 3 minutes. Season with salt and pepper to taste. Add the shredded cheese (reserve some for topping) and combine with the ingredients. Take off the heat, pour in the beaten eggs, and stir to combine. Top with the reserved cheese and transfer to the oven. Bake for 15 to 18 minutes, or until the top is lightly browned and crispy.
When done, let it cool for a few minutes before slicing and serving. To store, let it cool, and refrigerate for up to 5 days or freeze for up to 3 months.

Hi, I'm Martina - welcome to my page and thanks for stopping by!
I currently live in the UK. I hold a degree in Economics and worked in auditing, but I have always been passionate about nutrition and healthy living. I love food, science, photography and creating new recipes and I am a firm believer in low-carb living and regular exercise. As a science geek, I base my views on valid research and I have first-hand experience of what it is to be on a low-carb diet. Both are reflected on my blog, in my apps and cookbooks.
I changed the way I ate in 2011, when I was diagnosed with Hashimoto’s, an autoimmune disease that affects the thyroid. I had no energy, and I found it more and more difficult to maintain a healthy weight.
The irony was that, like so many other people, I used to follow what I believed to be a healthy, balanced diet. I avoided most fatty foods in fear of clogging my arteries and putting on weight. I based my diet around whole grains and vegetables, and limited my intake of animal products. I did exactly what the general dietary recommendations advised: I exercised more and ate less. Still, nothing worked. Finally, I got tired of dieting all the time, and I was determined to regain my health by following a different approach.
That’s when I decided to quit sugar, grains, and processed foods, and to start following a whole-foods-based ketogenic approach to food.
After we witnessed the incredible benefits of low-carb eating firsthand, my partner and I created KetoDiet, a tracking and planning application with hundreds of low-carb recipes, which is now one of the bestselling apps on the App Store and Google Play. Then, in 2012, I launched the KetoDiet blog, which helps over 2 million monthly visitors follow a whole-foods-based, low-carb, ketogenic lifestyle.
Since 2016, I've authored 10 low-carb & keto books to help people follow a healthy diet and to show them that this way of eating doesn't have to be complicated or boring.
When creating recipes for KetoDiet, I don't focus just on the carbohydrate content: you won't find any processed foods, unhealthy vegetable oils or artificial sweeteners. My recipes are all grain-free, sugar-free and gluten-free. Most of my recipes are paleo-friendly or include paleo-friendly alternatives. I always opt for grass-fed beef and butter, raw hormone-free dairy and healthy fats like coconut oil.

- Reviewed in the United States on January 20, 2019I have to admit that I was a little skeptical about the Keto way of eating when I perceived its emphasis on fat as the primary dietary ingredient above all else. Martina's cookbook dispelled the myths I'd envisioned about having meals with nothing but lard, bacon, and other saturated fats--her recipes use lots of fresh vegetables, fresh and dried herbs, and a variety of spices. You won't find a lot of packaged foods in Martina's cookbook--if any--and given that the cookbook focuses on meals that one can prepare in a crock pot or a single Dutch oven or deep skillet, you'll save time and headaches as well.
Since we've added this cookbook to our culinary library, I've prepared many meals for my family using Martina's Keto recipes. Her meals are flavorful and substantial--we've never felt as if we're eating "diet food" or skimping on our dinners! Our two teenage sons are notoriously picky eaters--especially our younger son--yet he told me after eating Martina's Keto-friendly Coq au Vin that it's one of his favorite homemade chicken dishes! Other favorites in our house: Salmon Chowder, Quick Meatball Casserole, Ranch Chicken Casserole, and Cajun Andouille Gumbo.
If this cookbook has any shortcomings, some of the ingredients are either hard to find or prohibitively costly. Also, even being that the meals are "one-pot" or "slow-cooker" doesn't always mean they save time--I find myself spending more time chopping vegetables than the amount of time it takes to actually cook the food--but this is a welcome setback when it means that the food our family will be eating is full of fresh and healthy ingredients.
Overall, I highly recommend this cookbook--one of the best I've ever purchased.
- Reviewed in the United States on March 16, 2019I've made the pork lo mein (pretty good), the beef bourguignon (is this really keto?), the smashed cauliflower (ok), the sausage frittata (these are pretty standard keto). I'm looking forward to making many of the other main dishes. I am a person who likes to get a bunch of dishes cooked and eat it over the next few days. This works for me, and I am using these recipes and Diane Sanfilippo's Keto book in tandem. It's been 6 weeks and I am not bored with the food yet, however, it's a LOT of meat for people who are not used to eating meat. Before, I would have beef and pork a few times a month, and eggs a few times a week, and now I am eating it daily. Never had one issue with my cholesterol before, so we'll see how the cholesterol levels are in a few months!!!!
Update: this is the keto book i keep coming back to in the colder months. Many recipes are excellent. I have had trouble with the desserts being burnt in slow cooker but now i cut time in half for those. The skillet recipes have all been really delicious!

I will say that there seems to be more one pot meals than slow cooker recipes and the slow cooker aspect is the main reason I got it. Regardless, most of the recipes are really good and we've enjoyed them. I did like that she did more than just add a bunch of cheese to recipes to make them Keto. I'm a pretty avid cook and I did find that most of the recipes were either things I had seen elsewhere or had made up something similar myself. However, I did let my mother (who is not a big cook) borrow it and she really enjoyed it.

However, we've now made at least a half dozen of the recipes and have thoroughly enjoyed every one. The spices, herbs and food combinations have been great, and we've eaten veggies we may not have tried. I like making most everything in one pot. I would appreciate some pressure cooker/ instant pot recipes ... Maybe the next book from this creative cook 😊

It’s definitely a little too fancy for us. There was literally like five recipes maybe more for lamb, lamb? I’m never gonna buy lamb! I wouldn’t even know where to get it! does Walmart sell lamb?Anyway, too fancy- fancy ingredients, and too expensive for some of the stuff. I tagged about eight recipes that I will make out of the entire book- definitely not for your every day family over five people

I’ve actually made 4 recipes the first two weeks I had this book. They are delicious! Saves my life with meal-prepping.

I have practically been living out of this recipe collection for the last 2 months- everything is so tasty, and the finished meal actually resembles the photographs!
I have personally substituted olive oil for ghee, and haven't yet discovered what coconut aminos is, but this hasnt made a difference in practical application.
Best recipe collection I have had in a long time- full of colour and flavour, and tasty from beginning to end. Thank you!
