Slow Cooker Chicken Cacciatore
Serves 8
I was always happy when Mom made chicken cacciatore for dinner. We would eat it over pasta with lots of freshly grated cheese on top. Now, whenever I make this dish, I always think of my mom. Since the sauce is hearty and chunky, it’s perfect to make in the slow cooker. While any part of the chicken works great, I prefer to use skinless chicken thighs that are still on the bone. The chicken comes out so juicy and tender, and the bones add flavor to the sauce. I find that when you make this without the bone, the meat tends to be dry. Once the sauce is cooked, I remove the chicken from the bone and shred it, so you get chicken in every bite.
Recipe
Season the chicken with the salt and pepper to taste. Heat a large nonstick skillet over medium-high heat. Coat with cooking spray, add the chicken, and cook until browned, 2 to 3 minutes per side. Transfer to a slow cooker.
Reduce the heat under the skillet to medium and coat with more cooking spray. Add the garlic and onion and cook, stirring, until soft, 3 to 4 minutes. Transfer to the slow cooker and add the tomatoes, bell peppers, mushrooms, thyme, oregano, and bay leaf. Stir to combine.
Cover and cook on high for 4 hours or on low for 8 hours.
Discard the bay leaf and transfer the chicken to a large plate. Pull the chicken meat from the bones (discard the bones), shred the meat, and return it to the sauce. Stir in the parsley. If desired, serve topped with Romano or Parmesan.

This is great over whole wheat or gluten-free spaghetti (DeLallo is my favorite brand), as well as rice or polenta. For a low-carb option, serve it over spaghetti squash (see page 266).
Ingredients:
- 8 bone-in, skinless chicken thighs (about 5 ounces each), fat trimmed
- 3⁄4 teaspoon kosher salt
- Freshly ground black pepper
- Cooking spray or oil mister
- 5 garlic cloves, finely chopped
- 1⁄2 large onion, chopped
- 1 (28-ounce) can crushed tomatoes (I like Tuttorosso)
- 1⁄2 medium red bell pepper, chopped
- 1⁄2 medium green bell pepper, chopped
- 4 ounces sliced shiitake mushrooms
- 1 sprig of fresh thyme
- 1 sprig of fresh oregano
- 1 bay leaf
- 1 tablespoon chopped fresh parsley
- Freshly grated Pecorino Romano or Parmesan cheese, for serving (optional)

I cook because I love to eat. I’m not talking about just good-for-you foods like salads and quinoa—although, yes, those are great. The foods I crave range from classic comfort dishes to global cuisine, and everything in between. At the same time, I try to eat a light and balanced diet, and these two things don’t necessarily go together. That’s what led me to start experimenting in my own kitchen eight years ago. I wanted to find ways to eat the foods I craved, but without throwing off all of my hard work to lose weight and keep it off. Plus, as a mom, I had to find a way to please not only my palate, but my picky family’s preferences as well, because cooking separate meals is just not an option for me. The results of those experiments ultimately became my blog Skinnytaste.com, and later inspired my first cookbook, The Skinnytaste Cookbook.
My mission with my first cookbook was to help people create low-calorie food without sacrificing flavor. I also wanted to help take away some of the fear and intimidation that people—especially beginners—feel about cooking. I was thrilled that the book was received so well—thanks to loyal Skinnytaste fans and so many others, it was a bestseller. What a dream come true! Slow Cooker Buffalo Chicken Lettuce Wraps
Serves 6
All the flavors you love from Buffalo wings, without all those darn calories—it’s time to get your fingers dirty! I love making shredded Buffalo chicken in the slow cooker because it’s super easy and so versatile. I use leftovers on sandwiches, over salads, as tacos, and in just about anything I can think up.
CHICKEN
1 1/2 pounds boneless, skinless chicken breasts
1 medium celery stalk
1/2 medium onion, chopped
1 garlic clove
2 cups low-sodium chicken broth*
1/2 cup cayenne pepper sauce (I like Frank’s RedHot Original), plus more for serving
BLUE CHEESE DRESSING
6 tablespoons low-fat buttermilk
1⁄4 cup light mayonnaise
5 tablespoons crumbled blue cheese
2 tablespoons chopped scallion, white parts only
1⁄8 teaspoon garlic powder
1⁄8 teaspoon onion powder
1⁄8 teaspoon dried parsley flakes
1⁄8 teaspoon kosher salt
Freshly ground black pepper
12 outer lettuce leaves, such as green leaf, red leaf, or iceberg
3⁄4 cup shredded carrots
*Read the label to be sure this product is gluten-free.
1. For the chicken: In a slow cooker, arrange the chicken, celery, onion, and garlic. Pour in enough broth to cover the chicken (add water if the broth isn’t enough).
2. Cover and cook on high for 2 hours or on low for 4 hours, until the chicken is cooked through.
3. Remove the chicken from the slow cooker and discard the liquid and vegetables. Shred the chicken with 2 forks and return it to the slow cooker. Add the hot sauce and cook on high for 30 minutes.
4. For the blue cheese dressing: In a blender, combine the buttermilk, mayonnaise, 2 tablespoons of the blue cheese, the scallion whites, garlic powder, onion powder, parsley, salt, and pepper to taste. Blend until smooth. Stir in the remaining 3 tablespoons blue cheese.
5. To serve, put 2 lettuce leaves on each of 6 plates. Place a generous 1⁄4 cup chicken on each leaf, top each with 1 tablespoon shredded carrots, 1 tablespoon celery, and 1 tablespoon of the dressing.

- Reviewed in the United States on August 6, 2019Uses: I am a busy professional and I use this book for meal prep. I use all 3 of her books actually but this is my favorite one. I mark my calendar on Friday afternoons w/what I am going to make that weekend or following week for dinner, depending. Usually have 8-10 weekends indicated in advance. Use this to make quick list before going to the market. Always pick one recipe from this cookbook [preferably a slow cooker one], and one recipe from her other cookbooks. Make one recipe on Sunday [lunch for the week for me] and one recipe on my household dinner day [if serves 6 or more, tend to have leftovers, or just double the recipe to make sure have leftovers, cook once eat twice]. For slow cooking during the week, prep it in a slow cooker after dinner night before. Use a slow cooker liner. Put prepped SC insert into the fridge. In the morning take it out put it in the slow cooker, put on low and go.
Pros: Recipes are delicious, great for prepping ahead. Love the detail on how to portion recipes for proper meal prep & weight management. Haven’t had a bad meal since using this. Really appreciate the volume of lower calorie but high protein choices. All very tasty and easy to make.
Cons: This recipe book [as with all recipes in my opinion], do not account for prepping in their timing. If it says takes 30 min, I assume 45 min to include 15 min of prep.
Note: I have found the pre-cooking before slow cooking to be more of a suggestion for me... I am sure it enhances the flavor of the recipes... I have no doubt it is well tested & makes dishes even more delicious...but ain't got no time for that. So if it's the cacciatore recipe mentioned above, if the ingredient goes in the slow cooker for the full cooking time, I just dump it in at the beginning. No sautéing garlic & onion ahead, or the meat. As a regular slower cooker user, if it's raw beef, turkey, or lamb for ex. I just cook it longer [try to not do more than 10 hours if possible]. If it's chicken, I cook it about the time suggested, maybe a little less if it's breast. Just tends to dry out. Chicken SC recipe great choice for Sunday afternoon cooking for me. Dairy as a general SC rule goes at the end.

The first thing I prepared was the Asiago-Crusted Chicken Breasts (pages 148 and 149) and they were a big hit with the whole family, including my husband who isn't a big fan of chicken anything. The second recipe I tried was the Banana Pudding Cups (pages 278 and 279) and LOVED IT! I plan on making these for our Thanksgiving dinner next week, and I have no doubt our extended family members will love it too because they are all banana pudding fanatics. Other recipes I tried are Banana Almond Smoothie Bowl (pages 30 and 31), Slow Cooker Chicken Burrito Bowls (pages 92 and 93), and Slow Cooker Chicken Taco Chili (pages 62 and 63) - all HUGE hits!
The photos in this cookbook are vivid and beautiful and the page layout is so easy to navigate. The chapters are divided into several delicious categories and you're sure to find something you enjoy among these great choices:

- Reviewed in the United States on January 7, 2018I really love this book. It’s perfect for young professionals who haven’t cooked much and are trying to get away from buying lunch or take out. The recipes are fairly direct and simple, as are the ingredients. I’ve made about 1/8-1/4 of the recipes in the book so far and a lot of the spices come up again, so you’re not constantly hunting down obscure spices at Whole Foods/Trader Joe’s that you’ll never use again. In fact, it’s rare that I have to go anywhere other than Aldi to gather up the ingredients. The slow cooker recipes for the most part have been so quick, easy, and simple. The chicken burrito bowls are a particular favorite. Some of the “fast” recipes take a bit longer and may have a more involved process but are typically worth the increased effort. The Santa Fe eggrolls with avocado dipping sauce are another go to. There’s a whole chapter for zoodles but since I don’t have a spiralizer I haven’t touched that one yet. I don’t think of the cookbook so much as a diet/weight loss cookbook as just a simple, more health conscious one. Some of the recipes are more clearly aimed at reduced carbs but overall the recipes rely more on seasoning and occasionally flavors from cheeses which are typically used more modestly. I’m short, it’s a great book for a single person trying to do quick meals at the end of a long day or meal prep for the week, or for hosting friends for dinner.

Me gusta mucho el libro. Lástima que esté disponible solo en inglés. Aún así. he hecho unas cuantas recetas y estoy muy satisfecha con el resultado: ricas y originales.

Un ottimo libro (in lingua inglese) per chi vuole sperimentare sapori diversi con ingredienti facilmente reperibili riuscendo a preparare piatti gustosi e leggeri.

I have two of Gina Homolka's cookbooks, and she never disappoints. I like the eclectic collection of various food types and flavours. There are great choices, the recipes are easy to follow and (for the most part) the ingredients are easily found at the supermarket. I've made 4 or 5 recipes for this slow cooker cookbook and they've all been winners. I cooked the Lamb Ragu for my friends, and we all raved about it. The soups are also very tasty. I've had repeated requests from my family for the oatmeal. I would never have thought to make oatmeal in a slowcooker, but it really is very good.
If you're looking for healthy, delicious, well-rounded meals, I'd definitely recommend this cookbook. The author even provides the calorie counts and nutritional information per dish, so it takes the guess-work out, if you are counting calories.

Das neue Buch von Homolka ist noch besser als ihr Erstwerk.
Wir haben nun nach einem Jahr nahezu alle Gerichte mindestens einmal, die meisten sogar mehrmals gekocht.
Sie sind insgesamt nochmals deutlich raffinierter und besser ausgearbeitet, präziser bei Mengen und Geschmackskomposition.
Dennoch wird der erfahrene Koch/Köchin vll. an der ein oder anderen Stellschraube drehen, um seinen/ihren persönlichen Geschmack besser zu treffen.
Im Buch enthalten sind jetzt auch so genannte „weekly dinner plans“, die so abgestimmt sind, dass weniger verschiedene Zutaten gekauft werden müssen, Reste werden an den darauf folgenden Tagen eingeplant oder für spätere Verwendung eingefroren. Diese Pläne gab es bisher nur online, auf ihrer Website sind noch viele mehr zu finden.
Wir haben uns tatsächlich angewöhnt, nun Wochenweise komplett auszuplanen und einzukaufen, haben auch in der Arbeit immer großartige Gerichte und Snacks dabei, auf die die Kollegen meist neidvoll blicken, während sie ihr Supermarktsandwich oder das „Kantinenmeisterwerk“ hinunter würgen. Positiver Nebeneffekt: Am Ende des Monats bleibt deutlich mehr Geld im Beutel, da nahezu nichts im Müll landet bzw. keine verarbeiteten Gerichte zugekauft werden müssen.
Einmal die Woche plant Homolka einen „Dinner Out“ Tag ein, an dem Abends geschlemmt werden darf, was man möchte. Wir nutzen das oft für den Besuch im Restaurant, auch ein Döner oder das Brathendl darf ruhig sein.
Fazit: Noch „g’schmackiger“, raffinierter und durchdachter als das erste Buch, tolle Hilfestellungen für die Mahlzeitenplanung eines ganzen Monats (!), sehr viele Gerichte mit Fleisch, für Vegetarier bedingt geeignet.
